Esperanza Salmon Alvarez – Awardee 2010


Pasuquin is the center of salt making in the province. In this same town, is the Pasuquin Bakery known for their special bread called Biscocho, a kind of bread baked to a delicate crispy texture with a hint of anise flavor. Esperanza learned the secret of biscocho-making at an early age and continued the business after the demise of her parents. Today, their Biscocho continues to grow in popularity and has made Pasuquin famous as the only source.
